I love apple rhubarb everything. and thought this would b a great idea hope u like it

Ingredients

  • - 2 cups cake flour
  • - 1 1/2 cups sugar
  • - 3 large eggs
  • - 3 tabsps olive oil
  • - about 1 cup rhubarb diced in food processor
  • - 1 1/2 cups apple sauce
  • - pre-heat oven 350
  • - prepare 3 round cake pans
  • - bake about 40 mins til golden brown ot til tooth pic comes out clean
  • - cake batter shouldn't b loose. if so add a lil more cake flour lil at a time
  • MAKE THE FROSTING
  • - 1 large tub white frosting
  • - dice n food processor 1/2 stalk of rhubarb leave in processor
  • - pour in about 1/4 cup apple juice and combine well n processor to taste not to sweet and not 2 tart
  • - large mixing bowl

  • Step 1
    mix all ingredients 2gether well. no lumps
  • Step 2
    pour into prepared cake pans greased or sprayed with pam. or u may use oblong cake pan prepared .
  • Step 3
    bake n pre-heated oven for 40 mins or til golden brown and a tooth pic comes out clean
  • Step 4
    let cool. turn top over to have even cakes. if cake is domed take a knife and cut off the domed part 4 a even layer cake. never throw away the cake part u have from cutting the domed part off. kinda crumb it and place n freezer bag to use with something else later
  • Step 5
    then frost with rhubarb frosting a lil between layers. til u get 2 the top. then frost the sides. garnish with a out lined apple and green stem made with frosting n pastry tube. or u can buy those conament bottles that hold mustard mayo ect and place in them to decorate ur cake
  • Step 6
    pour about 1/4 cup of apple juice into rhubarb and blend well. then place frosting into large mixing bowl. add ingredients from food processor blend well. then follow step 5 above. hope u like this cake its for all rhubarb lovers out there
