This wonderful old recipe comes from a children's storybook that I came across when I was shelving away books in a school library. The book by Patricia Polacco entitled "My Grandma's Thunder cake is one of a series of kid's books with easy recipes included in the story. One other that comes to mind is "A Cranberry Thanksgiving" with a recipe included by Wende Devlin So if you have some junior chefs in your family you may want to get together with the kids and make this yummy cake. I have made it before and it was really good. Happy cooking and Enjoy.

Ingredients For my grandmas thundercake

  • CREAM TOGETHER ONE AT A TIME:
  • 1 cup of shortening
  • 1 1/4 cups of sugar
  • 1 tsp. vanilla
  • 3 eggs, separated blend yolks in. beat whites until they are stiff,then fold in
  • 1 cup of water
  • 1/3 cup of pureed tomatoes.
  • SIFT TOGETHER:
  • 2 1/2 cups of cake flour
  • 1/2 cup of dry cocoa powder
  • 1 1/2 tsp. baking soda
  • 1 tsp.salt

How To Make my grandmas thundercake

    Mix dry mixture into creamy mixture
  • 2
    Bake in two greased and floured 8 1/2-inch round pans
  • 3
    Bake at 350 F for 35-40 minutes or until a wooden toothpick comes out clean when inserted in middle of the cakes
  • 4
    Frost with chocolate butter frosting
  • 5
    Top with strawberries
