my favorite banana bread
Everyone has their favorite banana bread recipe. This is mine! It is moist and flavorful...a great way to use up over-ripe bananas. I think the kids let them go brown on purpose!

Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter (softened)
- 3/4 cup dark brown sugar
- 1 teaspoon vanilla
- 2 large eggs (beaten)
- 2 1/2 cups bananas (over-ripe and mashed)
- 1/2 cup walnuts (chopped, optional!)
How To Make my favorite banana bread

Step 1Preheat oven to 350 degrees. Spray 9x5 inch loaf pan with Pam or Baker's Joy.

Step 2In a large bowl, combine flour, baking soda and salt. In mixing bowl, cream butter and brown sugar then add vanilla.

Step 3Stir in eggs and bananas until blended, then add flour mixture to moisten and don't overmix. (If you are adding nuts, fold them into batter). Pour batter into pan.

Step 4Bake for about an hour or until a toothpick inserted into the center comes out clean.
