mudslide cupcakes/bailey's irish cream whipped

I ran out of space on title of recipe, last word was cream. I am wondering how the Bailey's whipped cream would taste on homemade pumpkin pie? or some sort of pudding.

Ingredients
- 2/3 - sugar
- 2 cup - flour
- 1 1/2 tsp - baking powder
- 1/2 tsp - baking soda
- 1 1/2 tsp - instant coffee, to taste, your choice
- 3/4 cup - unsalted butter, room temperature,
- 2 - eggs
- 2/3 cup - melted vanilla ice cream (can also use coffee or mocha ice cream)
- 1/4 cup - homemade kahlua (or store bought)
- 1/4 cup - bailey's irish cream (or store bought)
- - 1...whisk flour, baking powder, baking soda and coffee in bowl. 2...beat eggs & sugar in bowl till light & fluffy. 3...beat eggs, ice cream, kahlua & bailey's into sugar and butter, mis till blended. 4...fold in flour mixture.
- - 5... fill cupcake liners 3/4 full. 6...bake at 350 fors about 25 minutes or perform toothpick test. 7...top with bailey's irish cream whipped cream, garnish as desired.
- BAILEY'S IRISH CREAM WHIPPED CREAM
- 2 cups - heavy whipping cream
- 2/3 cup - sugar
- 2 tbs - homemade irish cream (store bought would do)

Step 11...Do not overbeat cream, just till fairly firm peaks form.

Step 2Mix sugar and Bailey's irish cream till well combined and sugar is dissolved, fold into whipped cream.

Step 3Making sure cupcakes are cool, spread cream on cupcakes and garnish as desired. Irish Cream topping may be doubled if you like more topping on cupcakes, or to be used on something else.
