Every year an elderly lady who attended my husband's church would make his family a walnut cake at Christmas time. After she passed, the job fell to me. Of course, she shelled the walnuts to make her cake but I take the easy way out and buy them already shelled.

Ingredients

  • CAKE:

  • 1/2 c
    butter, softened
  • 1/2 c
    shortening
  • 2 c
    sugar
  • 4
    eggs
  • 3 1/2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 1/2 c
    buttermilk
  • 2 tsp
    pure vanilla extract
  • 1 1/2 c
    ground walnuts
  • FROSTING:

  • 2 pkg
    cream cheese - 1 8 oz. and 1 3 oz., softened
  • 3/4 c
    butter, softened
  • 5 - 5 1/2 c
    confectioners' sugar
  • 1 1/2 tsp
    pure vanilla extract
  • 1/3 c
    finely chopped walnuts

How to Make Mrs. Turner's Christmas Walnut Cake

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, cream butter, shortening and sugar.
  3. Add eggs 1 at a time, beating well after each addition.
  4. Combine flour, baking soda and salt in another bowl.
  5. Add to the creamed mixture alternately with the buttermilk and vanilla. Beat on low speed just until combined.
  6. Stir in the ground walnuts.
  7. Pour into 3 greased and floured 9 inch round cake pans.
  8. Bake for 20 - 25 minutes until a toothpick inserted near the center comes out clean.
  9. Cool for 5 minutes, then remove from pans to a wire rack and cool completely.
  10. For frosting, beat cream cheese and butter in a mixing bowl. Add sugar; mix well. Add vanilla; beat until smooth. Spread between layers and over top and sides of cake. Sprinkle with walnuts.

    Store in refrigerator.
