Ingredients
- 5 large eggs
- 1/2 cup butter
- 1/2 cup vegetable shortening
- 2 cups sugar
- 1 teaspoon baking soda
- 1 cup buttermilk
- 2 cups all purpose flour, sifted 2 times
- 1 cup coconut
- 1 cup chopped nuts (i use pecans or walnuts)
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- CREAM CHEESE FROSTING
- 1 package cream cheese, room temperature. 8 oz.
- 1/2 cup butter, room temperature
- 1 pound powdered sugar (3 1/2 cups)
- 1 teaspoon almond extract
How To Make mrs. dowell's italian creme cake

Step 1Preheat oven to 350*. Separate eggs and beat whites until stiff. Set aside.

Step 2Cream butter, shortening and sugar. Add egg yolks one at a time, beating well after each addition. Dissolve soda in buttermilk; add alternately with flour. Beat well. Add coconut, nuts and extracts.

Step 3Fold in stiffly beaten egg whites. Pour into 3 9inch baking pans. using 2 cups of batter for each pan. Bake at 350* for 25 minutes. Cool completely, then frost with cream cheese frosting. keep in the frig.
