Eating these cookies brings back many happy memories visiting with all our relatives at Grandma and Grandpa's house for the holidays. Grandma always had the cookie jar fully stocked with all of the favorite "Norwegian cookies"! This recipe is one of our family's favorites now...and hopefully will be for generations to come.

Ingredients

  • 1 c
    butter
  • 1 c
    sugar
  • 2 c
    all purpose flour
  • 5
    eggs
  • 1/2 tsp
    baking powder
  • 3/4 c
    chopped , blanched almonds
  • 1/2 c
    currants
  • 1/4 tsp
    cardamom

How to Make Mor Monsen Kake

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Combine sugar and softened butter.
  3. Add eggs to butter, sugar mixture.
  4. Combine dry ingredients.
  5. Add dry ingredients to butter, sugar and egg mixture.
  6. Spread half of dough into a greased 10x 15 inch cookie sheet.
  7. Bake at 350F for 13 to 15 minutes till golden brown.
  8. Cool for 30 minutes then slice diagonally. Cookies should be diamond shaped.
    Approximate size is 2 inches length from corner to corner.
