My family just eats these up whenever I make them!!

Ingredients

  • 12 - vanilla wafers
  • 2 packages cream cheese
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2 - eggs
  • 12 - foil liners, place in muffin/cupcake tin

How To Make mini cheesecakes

  • Step 1
    Oven preheated to 325 degrees
  • Step 2
    Place 1 wafer in each liner.
  • Step 3
    Mix cream cheese, vanilla and sugar on medium speed until well blended.
  • Step 4
    Add eggs, 1 at a time, mixing well after each. Pour over wafers, filling 3/4 full.
  • Step 5
    Bake for 25 minutes.
  • Step 6
    Remove from pan when cool. (while warm top with chocolate chips) Chill. After chilled add toppings such as fruit, preserves, nuts or whatever you might like.
