  • 1/3 c
    unsalted butter, softened
  • 2
    eggs
  • 1 c
    pure maple syrup
  • 1 1/4 c
    all purpose flour
  • 2 tsp
    baking powder
  • pinch
    salt
  • 1 c
    walnuts, coarsely chopped
  • FROSTING

  • 2 Tbsp
    unsalted butter
  • 1 c
    sifted powdered sugar
  • ·
    pure maple syrup, as needed

How to Make Mennonite Maple Walnut Cake

Step-by-Step

  1. Preheat oven to 350F. Lightly coat an 8-square baking pan with nonstick cooking spray.
  2. Beat together butter, eggs, and syrup.
  3. Sift together flour, baking powder, and salt, and stir into butter mixture gradually. Beat with whisk until smooth fold in walnuts.
  4. Pour into a greased square pan and bake 25 to 30 minutes, or until a wooden pick inserted in center comes out clean.
  5. Let cool completely in pan on wire rack before frosting.
  6. To make frosting, Melt butter and blend in the powdered sugar. Add just enough maple syrup yo bring it to spreading consistency.
  7. Frost top of cake and serve.
