Ingredients

  • 1 c
    granulated sugar
  • 2
    egg
  • 3/4 c
    vegetable oil
  • 1 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 tsp
    ground cinnamon
  • 1/2 c
    chopped raisins
  • 1 1/2 c
    grated carrots

How to Make Memphis City Schools Carrot Cake

Step-by-Step

  1. Heat oven to 350 degrees F. Grease and flour a 13 x 9-inch cake pan.
  2. Beat eggs with sugar, one at a time. Mix in oil.
  3. Mix dry ingredients. Mix into egg mixture. Add raisins and carrots. Pour into prepared pan.
  4. Bake for 25 minutes.
