melinda maple nut cake
A good friend of mine made this cake especially for me knowing that being Quebecoise is loving the essence of maple syrup. She knew I love maple syrup. I was very astounded and delighted with the results.

Ingredients
- 1 box yellow cake mix
- 1/2 cup water
- 3 medium eggs
- 1 cup maple imitation syrup
- 1 teaspoon maple extract
- 1 cup chopped walnuts
- MAPLE CREAM CHEES GLAZE
- 11/2 cups powdered sugar
- 3 tablespoons butter, softened
- 11/2 ounces cream cheese
- 1/4 cup maple flavored syrup
- 1 ounce jack daniels bourbon
How To Make melinda maple nut cake

Step 1Heat oven to 350 degrees. Grease a a 12 cups pan with shortening and flour it slightly.

Step 2In a large bowl beat all cake ingredients with an electric mixer . Beat for about 3 minutes. Pour into pan. Bake about 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool about 15 minutes and remove form the pan and cool it about 2 hours.,

Step 3In a large bowl beat powdered sugar, butter, cream cheese and syrup with an electric mixer. Beat in enough of the remaining syrup to make a smooth soft frosting that flows down the sides of the cake. Glaze the cake. Melinda would always comment to me "Francine you always could use more Bourbon than syrup...(ha ha) Take a swig!

Step 4Note that Melinda does not use real maple syrup because the flavor of the imitation maple syrup is more intense.
