magic buttercream frosting

This recipe has its original roots in my mom's 1960 Better Homes and Gardens Cook Book, originally titled "Butter Frosting." The tweaks to that original recipe have come through 40+ years of experimentation by her and I. This is the final version we've settled on together as of three years ago. This frosting is so great because it is light, airy, sweet but not too sweet, and can be made into just about any flavor you can think of! I hope you enjoy.

Ingredients

  • FOR THE BASE/BASIC VANILLA FROSTING:
  • 2 sticks butter (1 cup) softened
  • 2 teaspoons pure vanilla extract or 1 4
  • 2 tablespoons milk (3 if you are making vanilla, chocolate, coffee, mocha, caramel, and butterscotch versions)
  • 3 cups confectioners' sugar
  • FOR CHOCOLATE, AFTER 1ST WHIPPING ADD
  • 2 ounces chocolate, unsweetened, melted and cooled to room temperature
  • LEMON, AFTER 1ST WHIPPING ADD
  • 2 teaspoons lemon zest, grated
  • 1 teaspoon lemon extract
  • 1 tablespoon lemon juice
  • LIME, AFTER 1ST WHIPPING ADD
  • 2 teaspoons lime peel, grated
  • 1-2 tablespoon lime juice, to taste
  • ORANGE, AFTER 1ST WHIPPING ADD
  • 2 teaspoons orange zest
  • 1 teaspoon orange extract
  • 1 tablespoon orange juice, fresh or frozen concentrate (more orange-y)
  • BUTTERSCOTCH, AFTER 1ST WHIPPING ADD
  • 1/4 cup butterscotch ice cream topping
  • CARAMEL, AFTER 1ST WHIPPING ADD
  • 1/4 cup caramel ice cream topping
  • COFFEE, AFTER 1ST WHIPPING ADD
  • 2 teaspoons instant coffee powder or 2 packets starbucks via
  • MOCHA, AFTER 1ST WHIPPING ADD
  • 2 teaspoons instant coffee powder or 2 packets starbucks via
  • 2 ounces chocolate, unsweetened, melted and cooled to room temperature

How To Make magic buttercream frosting

  • Step 1
    Combine ingredients in bowl OTHER than the melted, cooled, unsweetened chocolate for chocolate and mocha versions
  • Step 2
    Whip for 10 minutes (Yes, 10! It results in a mousse-like texture. You may need to add extra milk or powdered sugar)
  • Step 3
    For chocolate or mocha: Drizzle in the melted and cooled unsweetened chocolate and beat for an additional 5 minutes.
