All I have to say is these are so darn good! I can't just eat one!

Ingredients

  • MUFFINS:
  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 2 cups all purpose flour
  • MACAROON FILLING:
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 cup finely chopped blanched almonds
  • 1 teaspoon almond extract
  • 1/2 cup flaked coconut, chopped fine

How To Make macaroon muffins

  • Step 1
    Muffin mixture: In a large bowl, cream butter and sugar. Beat in eggs, flavorings and flour. Drop by teaspoon into sprayed, mini muffin cups. Press dough on bottom and up sides of cups. Chill Fill cups with Macaroon Filling. Bake for 25-30 minutes at 325^ . makes about 50 mini muffing.
  • Step 2
    Macaroon Filling: Beat eggs until light and foamy. Gradually beat in sugar until well blended. Fold in almonds and coconut and extract. These freeze well.
