Wow! This cake was very well recieved in my home. It is so good. I could just eat the topping as a dessert. It is full of apples inside and on top. It is also a nice tender cake. It is topped off with a cinnamon crunch topping. This is a cake I created from an old plain cake recipe. I changed it up by adding sourcream, applesauce, using less butter, and sifting the flour mixture. I also added in the apples, cinnamon and a crunch topping. That made it into a whole new cake! I am sure you will all enjoy this loaded apple cake! :-)

Ingredients

  • CINNAMON CRUMB
  • 1 tablespoon cinnamon
  • 1/2 cup light brown sugar
  • 1 cup flour
  • 1/2 cup chilled butter chopped up into cubes
  • 1/2 cup optional: chopped nuts (pecans or walnuts)
  • CAKE
  • 4 - apples peeled cored and sliced into 1/2" slices
  • 1-2 tablespoon lemon juice ( to prevent apples from browning )
  • 1/2 cup softened butter
  • 1 cup light brown sugar packed
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup apple sauce
  • 1 cup sour cream
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup optional: walnuts or pecans

How To Make loaded apple cinnamon crumb cake

  • Prepared pan
    Step 1
    Grease and flour an angel food pan. Set aside. Preheat oven to 350° F.
  • Step 2
    Topping: In a bowl, mix brown sugar, cinnamon, and flour. Add chopped butter. Mix well with a pastry cutter or 2 sharp knives. It will look crumbly. Add the nuts. Place hands in bowl. Knead mixture together until it forms almost like a dough. Break it apart until it resembles large crumbs. Place in refrigerator until needed.

    Slice apples and toss with lemon juice.
  • Step 4
    Cake: In a large bowl, cream together brown sugar and butter. Beat until smooth.

    Add the eggs and vanilla to the mixture. Mix well. Blend in applesauce and sour cream. Do not beat.
  • Step 6
    Sift in the flour, salt, 1/2 tsp cinnamon, and baking soda. Mix on low speed until blended. Mix in nuts.
  • Step 7
    Place 1/2 of the mixture into the bottom of an angel food pan. With the back of a spoon, level the batter. Make a well in the center of the batter with a spoon all the way around.
  • Step 8
    Place half of the sliced apples in the well, overlapping in a spiral pattern. Sprinkle 1 Tbsp sugar with 1/4 tsp cinnamon over apple slices. Push down on apples with the back of a large spoon so that the apples are pushed into the batter. Cover with the remaining batter, smooth out.
  • Step 9
    Place remaining apples on top in a spiral pattern until gone. Place on top of each other. If you have extra, avoid putting apples on the outside and inside edges. Center the apples. Slightly push down on apples with the back of a spoon. Sprinkle the top with the cinnamon crunch you placed in the fridge.
  • Baked to perfection
    Step 10
    Place on the center rack in a 350°F oven. Bake for about 50 minutes or until a toothpick inserted comes out clean.

    Step 11
    Remove the center cone from the pan after it cools for 30 minutes. Then, cool completely. Run a knife around the cake in the pan to loosen the cake. You may need to do the same to the bottom of the cone pan. Place a platter over the pan. Flip the cake onto a platter. Carefully, turn the cake over with crumbs on top.
