I got this recipe from Taste of Home. Really good & moist. Next time I make it I'm going to try strawberry, cherry, or blueberry pie filling!!

Ingredients

  • 2 cups buttermilk
  • 1 cup sugar
  • 2 - eggs
  • 2 tablespoons butter or marg., melted
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 1/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 can lemon pie filling
  • - topping:
  • 1 cup flour
  • 2/3 cup sugar
  • 1/3 cup cold butter or marg. cubed

How To Make lemon crumb cake

  • Step 1
    In large bowl beat first 5 ingredients.
  • Step 2
    Combine dry ingredients. Gradually add to mixture.
  • Step 3
    Grease 9x13 pan. Pour mixture into pan.
  • Step 4
    Drop pie filling by teaspoons onto cake mixture.
  • Step 5
    Combine topping by cutting in butter until mixture is crumbly texture. I used a pastery cutter, pictured.
  • Step 6
    Sprinkle topping over cake mixture.
  • Step 7
    350 degrees for 30-35 minutes.
