lea's pineapple cake
I was looking thru some hand written recipes and found this cake recipe.I think it was from our local newspaper,The Pasadena Star-News,not sure. I haven't made it in a long time but I remember loving it.I hope you'll enjoy it as much as I remember .I'm going to make it Thursday for the Seniors lunch as Jessie isn't available.It's a refreshing dessert I think they will like.

Ingredients
- - 1 butter cake mix
- - 1/2 c pineapple juice
- - 3 large eggs
- - 7 t butter
- - 1 large can crushed pineapple
- - 1 large pkg vanilla instant pudding
- - 8 oz cool whip,thawed
How To Make lea's pineapple cake

Step 1Mix cake mix as directed using the 1/2 c pineapple juice instead of water,eggs and butter. Pour into 13x9 inch baking pan. Bake according to box.(350 deg.26-31 mins) Place on wire rack,pour crushed pineapple,including juice over cake. Prepare vanilla pudding according to directions on box. Pour the pudding over the layer of pineapple. Spread Cool Whip over top.Chill cake to set pudding. Refrigerate any left overs.
