joan's lemon glazed cake

This recipe was given to me by my dearest friend, Joan Kretzschmar. My daughters and I watched her make it several times, and we always have it for special occasions, and remember laughing with our dear Joan.

Ingredients

  • 1 box duncan hines butter yellow cake mix
  • 2 cups powdered sugar
  • 1/2 cup fresh lemon juice
  • 1 - zest of one lemon
  • 1/4 cup melted butter

How To Make joan's lemon glazed cake

  • Step 1
    Bake cake as directed on box. It's best to use a disposable 13x9 foil cake pan. While it's baking, prepare the icing.
  • Step 2
    As soon as you take cake from oven, punch holes in the cake with a big cooking fork.
  • Step 3
    Pour the icing all over the cake so that it goes down into the holes.
  • Step 4
    Let cool completely, then sprinkle with more powdered sugar. It's especially good if you make it the day before.
