This recipe came from my mothers best friend many years ago.
Best carrot cake I have ever eaten.

  • c
  • 1 1/4 c
    vegetable oil
  • 2 c
  • 2 tsp
    baking soda
  • 1 tsp
  • 2 tsp
  • 4
  • 3 c
    carrots, grated
  • 1 c
    walnuts, chopped

  • 1/2 c
    powdered sugar
  • 1/2 stick
    soft butter
  • 4 oz
    cream cheese, room temp.
  • 1 tsp
    vanilla extract

How to Make Jill's Carrot Cake


  1. Pre-heat oven to 350 degrees.

    Grease and flour 13 X 9 pan.
  2. Cream sugar and eggs, Add oil, nuts and carrots.
    Add sifted ingredients.
  3. Pour into the prepared 13 X 9" pan.

    Bake for 45 to 50 mins.
  4. Cool cake completely.
  5. While cake is cooling, combine all frosting ingredients.
    Mix well.
  6. When cake is cooled frost.
