My mommy Izobel was a great cook & baker. She practically cooked the best dishes and baked the best cakes there was. I, on the other hand, loves to cook and tried my best to bake. But there`s one chocolate cake recipe that my mom owned and many people loved. And for years of making this cake, i am proud to say that i did it with perfection! love you mom! Thanks for everything. :)

Ingredients

  • 3 medium eggs
  • 2 cups white sugar
  • 2 cups all purpose flour
  • 2 tablespoons pure vanilla extract
  • 1/2 cup vegetable oil
  • 1 cup hershey's unsweetened cocoa powder
  • 1 cup buttermilk
  • 1 cup boiling water
  • 2 teaspoons baking soda
  • FUDGE ICING
  • 1 cup sugar
  • 2 tablespoons pure vanilla extract
  • 1/2 cup evaporated milk ( best choice )
  • 1 cup hershey`s unsweetened cocoa powder
  • 1/2 cup light butter
  • FOR THOSE WHO LOVES MY SUGAR FREE VERSION, USE SPLENDA GRANULATED SWEETENER. WHATEVER AMOUNT OF SUGAR MY RECIPE REQUIRES , JUST SUBSTITUTE IT WITH THESAME AMOUNT OF SPLENDA GRANULATED SWEETENER :)

How To Make izobel`s moist buttermilk chocolate cake with fudge icing (moistest, softest, yummiest & simply the best!!!)

  • Step 1
    Preheat oven 175 degrees C or 350 degrees F. Grease ( spray cooking oil ) & sprinkle with flour a 9X13 inch pan.
  • Step 2
    Buttermilk Mixture : In a small baking bowl, combine 1 cup buttermilk and 2 teaspoons baking soda. Set aside.
  • Step 3
    In a large bowl, mix together 3 medium eggs, 2 cups white sugar, 1 cup hershey`s unsweetened cocoa powder, 1/2 cup vegetable oil and 2 tbsp pure vanilla extract until well blended. Add 1 cup boiling water, then gradually beat in 2 cups all purpose flour. Add in the buttermilk mixture ( that you set aside earlier ).
  • Step 4
    Pour batter into the greased 9X13 inch pan. Bake in the preheated oven for 1 hour and 15 minutes ( or until the toothpick inserted in the cake comes out clean ). Allow to cool.
  • Step 5
    Fudge Icing : In a pan, combine 1 cup hershey`s unsweetened cocoa powder, 1 cup sugar, 1/2 cup best choice evaporated milk ( it`s the best evaporated milk for this cake), 1/2 cup light butter and 2 tbsp pure vanilla extract. Bring to boil and cook for 2 minutes ( the most ). Remove from heat. Pour the cooked mixture in a baking bowl, beat for 5 minutes ( or until mixture is in its finest and thick enough to spreading consistency ). Pour the mixture to the cake giving it a beautiful dark brown color. Chill in the fridge for 1 hour and serve.
