Italian Filled Cup Cakes

I figure she must have gotten this one at church because the ladies would get together and share recipes but they liked to do it "creatively." I guess writing on a cut out of Italy was unique and awe inspiring!!
Ingredients

SIFT TOGETHER:
-
3 call purpose flour
-
2 csugar
-
1/2 ccocoa, unsweetened
-
2 tspbaking soda
-
1 tspsalt
-
ADD:
-
2/3 cmelted butter
-
2 cwater
-
2 Tbspwhite vinegar
-
2 tspvanilla extract
-
IN A SEPARATE BOWL MIX TOGETHER UNTIL SMOOTH:
-
8 ozcream cheese, room temperature
-
1whole egg, room temperature
-
1/3 csugar
-
1dash salt
-
THEN ADD:
-
6 ozchocolate chips and/or
-
1/2 ccoconut, shredded
How to Make Italian Filled Cup Cakes
- LINE CUPCAKE TIN WITH CUPCAKE PAPERS AND
FILL 1/2 FULL WITH BATTER - DROP 1 TBS CREAM CHEESE MIX IN
MIDDLE OF EACH CUPCAKE. DO NOT STIR AROUND - BAKE AT 350 FOR 25-30 MINUTES
- MAKES 2 DOZEN LARGE OR
30 SMALL CUPCAKES
NO NEED TO FROST -- THEY ARE FROSTED ON THE INSIDE!!
