italian filled cup cakes
I really had to chuckle when I saw this one in my mother's recipe box. It was actually written on a cut out paper map of the country of Italy!! I figure she must have gotten this one at church because the ladies would get together and share recipes but they liked to do it "creatively." I guess writing on a cut out of Italy was unique and awe inspiring!!

Ingredients
- SIFT TOGETHER:
- 3 cups all purpose flour
- 2 cups sugar
- 1/2 cup cocoa, unsweetened
- 2 teaspoons baking soda
- 1 teaspoon salt
- ADD:
- 2/3 cup melted butter
- 2 cups water
- 2 tablespoons white vinegar
- 2 teaspoons vanilla extract
- IN A SEPARATE BOWL MIX TOGETHER UNTIL SMOOTH:
- 8 ounces cream cheese, room temperature
- 1 - whole egg, room temperature
- 1/3 cup sugar
- 1 - dash salt
- THEN ADD:
- 6 ounces chocolate chips and/or
- 1/2 cup coconut, shredded

Step 1LINE CUPCAKE TIN WITH CUPCAKE PAPERS AND FILL 1/2 FULL WITH BATTER

Step 2DROP 1 TBS CREAM CHEESE MIX IN MIDDLE OF EACH CUPCAKE. DO NOT STIR AROUND

Step 3BAKE AT 350 FOR 25-30 MINUTES

Step 4MAKES 2 DOZEN LARGE OR 30 SMALL CUPCAKES NO NEED TO FROST -- THEY ARE FROSTED ON THE INSIDE!!
