iced cranberry-dark chocolate loaf

I have had the recipe for a cranberry loaf from my mom for so many years but my husband doesn't really like tart or sour tasting anything. So I decided to add the dark chocolate chips to see if they would offset the tartness of the berries and he LOVED it!! Perfect for Thanksgiving or Christmas!!

Ingredients For iced cranberry-dark chocolate loaf

  • 1/3 c
    orange juce
  • 3 tsp
    grated orange zest
  • 2/3 c
    buttermilk
  • 6 Tbsp
    melted butter
  • 2 lg
    eggs
  • 2 c
    sifted flour
  • 1 c
    + 2 tbsp sugar
  • 2 tsp
    cinnamon
  • 1 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1-1/2 c
    whole cranberries
  • 6 oz
    bag of dark chocolate chips
  • 1 c
    powdered sugar
  • 2 Tbsp
    or more, as needed of orange juice
  • 1 tsp
    grated orange zest

How To Make iced cranberry-dark chocolate loaf

    Set oven at 375. Cut a piece of parchment paper to fit a large loaf pan and spray w/ cooking spray. Fit the paper to fit the pan as best you can. In medium sized bowl, whisk together 1/3 cup O.J., 3 tsp of grated orange zest, buttermilk, melted butter and eggs.

    In large bowl, stir together the flour, sugar, cinnamon, baking powder and baking soda. Pour liquid mix into dry mix and mix just until combined. Stir in cranberries and dark chocolate chips. Reduce oven heat to 350.

    Carefully and slowly pour the batter into the pan lined w/ the parchment paper, ( you may have to stop and smooth it out a bit,) and smooth the top w/ a spatula. Bake between 40 to 50 minutes, depending on your stove. Mine took 50 minutes. I would check at 40 minutes w/ a toothpick inserted into the center. Let the loaf cool while making the icing. Once cool, remove the loaf to a plate, taking off the paper. In a medium sized bowl, whisk the powdered sugar, juice and zest until combined and drizzle over loaf.
