Very popular recipe by my mother, that is often requested for parties around the holidays.

Ingredients

  • 1 box graham crackers, crushed
  • 1 pound red cherries, candied
  • 1 pound dates, chopped
  • 1 pound pecans, in pieces
  • 1 pound bag coconut, shredded
  • 1 bag marshmallows, mini
  • 1 can condensed milk
  • 2 sticks butter

How To Make icebox fruit cake

  • Step 1
    Grind crackers very fine, like flour. You may use a food processor or blender.
  • Step 2
    Chop cherries, dates and pecans very fine; mix into crackers.
  • Step 3
    In saucepan, melt marshmallows and butter.
  • Step 4
    Pour condensed milk into cracker mixture and add marshmallow mix.
  • Step 5
    Stir together until blended well. Use your hands if needed.
  • Step 6
    Put into loaf pans lined with wax paper.
  • Step 7
    Refrigerate over night. -Makes 2 cakes.
