Ingredients

  • 1 box
    graham crackers, crushed
  • 1 lb
    red cherries, candied
  • 1 lb
    dates, chopped
  • 1 lb
    pecans, in pieces
  • 1 lb
    bag coconut, shredded
  • 1 bag(s)
    marshmallows, mini
  • 1 can(s)
    condensed milk
  • 2 stick
    butter

How to Make Icebox Fruit Cake

Step-by-Step

  1. Grind crackers very fine, like flour. You may use a food processor or blender.
  2. Chop cherries, dates and pecans very fine; mix into crackers.
  3. In saucepan, melt marshmallows and butter.
  4. Pour condensed milk into cracker mixture and add marshmallow mix.
  5. Stir together until blended well. Use your hands if needed.
  6. Put into loaf pans lined with wax paper.
  7. Refrigerate over night.
    -Makes 2 cakes.
