- ADJUSTING A RECIPE TO BE GLUTEN FREE, XANTHAN GUM OR GUAR GUM MUST BE ADDED:
- THE FOLLOWING CHART IS ON THE BOB'S RED MILL GLUTEN FREE FLOUR:
- 1/4 teaspoon xanthan gum for cookies
- 1/2 teaspoon for cakes
- 3/4 teaspoon for muffins & quick breads
- 1 - 1 1/2 teaspoons for breads
- 2 teaspoons for pizza crusts

Step 1Use the quantities suggested of Xanthan Gum per cup of flour used. For example, if you are making cookies with 3 cups flour, you should add 3/4 tsp of Xanthan Gum.
