How to Make Healthy wild blueberry-bran muffins
1Heat oven to 325. Spray muffin cups w/ cooking spray. In bowl, mix together wheat bran and milk. Let sit for 10 mins.
2In lg bowl, mix together applesauce, egg, brown sugar and vanilla. Beat in bran mix. In another bowl, sift together flours, baking soda, baking powder and salt.
3Stir dry mix into bran mix until moistened. Fold in blueberries. Spoon mix into muffin cups, 2/3 full. Bake 15-20 mins, or until tops spring back when touched.
