Ingredients

  • 1-1/2 cup wheat bran
  • 1 cup fat-free milk
  • 1/2 cup natural applesauce
  • 1 large egg
  • 2/3 cup light brown sugar
  • 1/2 teaspoon vanilla
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup wymans wild blueberries, frozen, or any other brand wild blueberries

How To Make healthy wild blueberry-bran muffins

  • Step 1
    Heat oven to 325. Spray muffin cups w/ cooking spray. In bowl, mix together wheat bran and milk. Let sit for 10 mins.
  • Step 2
    In lg bowl, mix together applesauce, egg, brown sugar and vanilla. Beat in bran mix. In another bowl, sift together flours, baking soda, baking powder and salt.
  • Step 3
    Stir dry mix into bran mix until moistened. Fold in blueberries. Spoon mix into muffin cups, 2/3 full. Bake 15-20 mins, or until tops spring back when touched.
