greek honey cake
Every year for the Jewish New Year I made my grandmother's family recipe for honey cake. Last year I wanted to do something different and I found this recipe for Greek Honey cake . I served it to the family and it was an instant hit.

- 1 cup sugar-for honey syrup
- 1 cup honey-for honey syrup
- 3/4 cup water-for honey syrup
- 1 teaspoon lemon juice for honey syrup
- 3/4 cup softened butter-for cake
- 3/4 cup sugar-for cake
- 3 - eggs-for cake
- 1/4 cup milk-for cake
- 1 cup flour-for cake
- 1 1/2 teaspoons baking powder-for cake
- 1/4 teaspoon salt-for cake
- 1/2 teaspoon cinnamon-for cake
- 1 teaspoon grated orange rind for cake
- 1 cup chopped walnuts for cake
How To Make greek honey cake

Step 1FOR SYRUP: combine sugar, honey and water in saucepan. Simmer 5 minutes.

Step 2Add lemon juice and boil two minutes. Set aside for later.

Step 3FOR CAKE: Combine flour, baking powder, salt, orange rind , cinnamon . Set aside

Step 4CAKE: Cream together, softened butter, sugar, eggs and milk.

Step 5CAKE: add dry ingredients to wet and mix well.

Step 6CAKE: mix in chopped walnuts (original recipe calls for chopped but I found them too heavy, so I grind them roughly in my mini food processor).

Step 7Pour into a greased 9 x 9 inch baking pan. Bake at 350 degrees until golden brown and tooth pick comes out dry when testing.

Step 8Allow to cool for 10 to 15 minutes, cut top into diamond shapes, pour syrup all over cake making sure it saturates cake evenly. Allow to sit for a few hours, cut and enjoy.
