Ingredients
- 3 1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 cup sugar
- 1 cup butter, softened
- 3 - eggs
- 1 1/3 cups fresh orange or other sweet citrus juice
- 2 tablespoons orange zest
- 2 cups orange or tangerine segments
- GLAZE
- 1 cup sugar
- 0.25 cup corn starch
- 1 1/2 cups orange juice
- 0.5 teaspoon salt
- 3 teaspoons butter
- 0.5 cup dried cranberries

Step 1Mix together the flour, baking soda, baking powder and first portion of salt

Step 2Cream butter and sugar til fluffy. Add eggs. Add orange zest and segments, and cranberries

Step 3Alternating, gradually add flour and orange juice while mixing. Beat til nice and smooth

Step 4Pour into a 11x14 pan and bake at 350 F for about 35 minutes

Step 5THE GLAZE: Mix sugar and cornstarch in a sauce pan. Add the orange juice gradually, blending nicely to avoid lumps. Add the last bit of salt and butter, then heat this mixture over a medium hot fire til it turns into a Golden glossy glistening gleam of goodness

Step 6Pour the glaze over the cake in the pan. I poke holes in the cake to help it soak in. Next time, I’m gonna use liquor instead of orange juice to make the glaze!
