grandma barr's wacky cake
One of my fondest memories of my Dad's Mom, Grandma Barr, was her "Wacky Cake" it was scrup-deli-ishous! i though i had lost it, but i just found it so i will get it on JP for posterity =) This is a great recipe for anyone w/dairy allergies. You can make a powdered sugar frosting w/orange juice and drizzle it over the top. i just made it for a gal's birthday at my Husband's work, who has wheat allergies.

Ingredients
- 3 cups flour
- 2 cups sugar
- 6 tablespoons baking cocoa
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3/4 cup oil
- 2 teaspoons vinegar
- 1 tablespoon vanilla
- 2 cups cold water
How To Make grandma barr's wacky cake

Step 1Measure all the dry ingredients into mixing bowl, i omit salt or use about 1/2 the amount. Mix thoroughly w/a pastry cutter, until well combined

Step 2Pour in wet ingredients, stir, until ingredients are well combined, it will be a bit lumpy. Do Not Beat!

Step 3Pour into 9" X 12" stoneware pan that's been lined w/parchment paper and lightly sprayed w/oil [misto]. Bake at 350 for 35 min. Test to make sure it is cooked through, by inserting a toothpick. Cool 10 min. turn out of pan and cool completely.
