grandma barbie's famous butter pecan cake & icing

In the yard of the house I grew up in and my parents still live in there is a 100 year old pecan tree, (it is HUGE) it produces gallons and gallons of pecans every year and my mother "Grandma Barbie" to my daughter, nieces and nephews, has become an expert at cooking with pecans! This recipe is best when fresh pecans are used ;)

Ingredients
- CAKE
- 2/3 cup butter, softened
- 1 1/3 cups sugar
- 2 - eggs
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2/3 cup milk
- 1 1/2 teaspoons vanilla
- 1 cup pecans, chopped and toasted
- ICING
- 3 tablespoons butter, softened
- 3 cups confectioners' sugar
- 3 tablespoons milk
- 3/4 teaspoon vanilla
- 1/3 cup pecans, chopped and toasted
- TOASTING NUTS: FOR 1 1/3 C. NUTS USE 3 TBSP. MELTED BUTTER: POUR BUTTER INTO BAKING PAN; STIR IN NUTS. BAKE AT 350 DEGREES FOR 10 MINUTES, STOPPING TO STIR TWICE. LET COOL. NUTS ARE READY TO BE USED IN RECIPES OR EATEN AS IS.
How To Make grandma barbie's famous butter pecan cake & icing

Step 1ICING: In a mixing bowl, cream butter and sugar.

Step 2Add milk and vanilla, beat until light and fluffy. Add additional milk if needed.

Step 3Stir in toasted pecans (you may reserve a small amount to sprinkle on top of your finished cake if desired).

Step 4CAKE: In a mixing bowl, cream butter and sugar until light and fluffy.

Step 5Add eggs, one at a time, beating well after each.

Step 6Combine flour, baking powder and salt; add this to the cream mixture alternately with milk.

Step 7Stir in vanilla and toasted pecans.

Step 8Pour batter into 2 greased and floured 8" round pans.

Step 9Bake at 350 degrees for 30-35 minutes.

Step 10Let cool for 10 minutes and remove from pans. Then let cool completely.

Step 11Shave top off of one of the cakes to make it level.

Step 12Spread icing over top of leveled cake and place second cake on top of it.

Step 13Ice the entire 2-layer cake.

Step 14Sprinkle toasted pecans on top, enjoy!
