good morning cafe cake
When you have company over this is the easiest, fastest and tastiest "Petit-Dejeuner" you could ever offer. This served with a fresh COINTREAU orange fruit salad. They could not ask you more.. but of course for a second helping...or another piece to go home...

Ingredients
- BOTOM LAYER
- 1 package yellow cake mix
- 1/2 cup melted butter
- 1 large egg
- MIDDLE LAYER
- 8 ounces cream cheese, room temperature
- 2 cups powdered 10x sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- TOP LAYER
- 2 cups black raspberries or red raspberries
How To Make good morning cafe cake

Step 1Mix components of the bottom layer together. Pour into one 8 inches square or 2 greased pans. I prefer to pour into 2 square pans depending of how much you want your crust to be thick. Do not worry the mixture will be thick. Bake at 350 degrees for about 20-30 minutes. Check the doneness. Do not over cook it.

Step 2Mix the middle layer together except the heavy cream. Whip the heavy cream and FOLD it into the cream cheese. Spread over the bottom layer. This should have a good 2 inches thickness.. Now cool in refrigerator for at least two hours or the day before depending on when you plan to serve.

Step 3Cover it with fresh fruits.......and sprinkle it with powdered sugar just before you serve it.
