golden gingerbread

I have not made this recipe but when I saw the recipe and the picture I was very interested in trying it. Even though the recipe says dark molasses,the picture of the gingerbread was indeed golden in color. I found the recipe in the June Essence magazine.

Ingredients
- - 1 c dark molasses
- - 1/2 c boiling water
- - 2 1/4 c flour
- - 1 t. baking soda
- - 1/2 t. cinnamon
- - 1 1/2 t. powdered ginger
- - 1/2 t. salt
- - 4 t. melted butter
- - 1/4 c packed dark brown sugar
- - 3/4 c nonfat greek yogurt (optional)
- - 3 t. dark molasses,optional
- - 2 c fresh blueberries,optional
How To Make golden gingerbread

Step 1Preheat oven to 350 deg. Grease and butter 8 in baking pan. Pour the molasses into a medium sixe mixing bowl add boiling water.Sift the dry ingredients into the molasses mixture..Add the melted butter and brown sugar and beat well. Pour the batter into the prepared pan and place in the oven. Bake for 35 minutes or until toothpick comes out clean. Optional: Drizzle the molasses into the yogurt,stirring constantly until mixture turns khaki color and all the molasses has been mixed in. Spoon a dollop of the yogurt into each serving of gingerbread and top with berries.
