Spring is the perfect time to enjoy this mouth watering cake, with the new crops of rhubarb bursting from the ground. i change up the recipe so that you can use a Gluten Free Flour Blend.

Ingredients

  • 3 cups gluten free flour blend, like pamala's
  • 1 cup brown sugar, firmly packed
  • 1 cup granulated sugar
  • 2 teaspoons cinnamon or apple pie spice
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup butter, softened
  • 3 - eggs
  • 1/4 cup yogurt , plain, vannila or strawberry
  • 1 cup chopped nuts, pecan or your choice
  • 4 cups rhubarb cut in ½ inch pieces
  • FOR GLAZE
  • 1 cup powder sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons water

How To Make gluten-free rhubarb coffee cake

  • Step 1
    Grease a 13"x9" cake pan preheat oven to 350
  • Step 2
    Mix dry ingredients in a bowl. set aside.
  • Step 3
    . In a separate bowl cream butter and sugar, add eggs and yogurt, beat on high for a few minutes.
  • Step 4
    Combine the liquid and dry ingredients, add rhubarb and nuts. This will be a thick batter, moisture will come from the rhubarb as the cake cooks
  • Step 5
    Cook for 1 hour or until a toothpick inserted into the center comes out clean.
  • Step 6
    To make the glaze mix powdered sugar, Cinnamon Spice Blend and water until smooth. When cakes starts to cool pour glaze over the top. ENJOY!
