Spring is the perfect time to enjoy this mouth watering cake,
with the new crops of rhubarb bursting from the ground.

i change up the recipe so that you can use a Gluten Free Flour Blend.

gluten free flour blend, like pamala's
1 c
brown sugar, firmly packed
1 c
granulated sugar
2 tsp
cinnamon or apple pie spice
3/4 tsp
1 tsp
baking soda
1/2 tsp
baking powder
1/2 c
butter, softened
1/4 c
yogurt , plain, vannila or strawberry
1 c
chopped nuts, pecan or your choice
4 c
rhubarb cut in ½ inch pieces


1 c
powder sugar
1 tsp
3 Tbsp

How to Make Gluten-Free Rhubarb Coffee Cake


  • 1Grease a 13"x9" cake pan preheat oven to 350
  • 2Mix dry ingredients in a bowl. set aside.
  • 3. In a separate bowl cream butter and sugar, add eggs and yogurt, beat on high for a few minutes.
  • 4Combine the liquid and dry ingredients, add rhubarb and nuts. This will be a thick batter, moisture will come from the rhubarb as the cake cooks
  • 5Cook for 1 hour
    until a toothpick inserted into the center comes out clean.
  • 6To make the glaze mix powdered sugar, Cinnamon Spice Blend and water until smooth.

    When cakes starts to cool pour glaze over the top.
