Spring is the perfect time to enjoy this mouth watering cake, with the new crops of rhubarb bursting from the ground. i change up the recipe so that you can use a Gluten Free Flour Blend.

Ingredients
- 3 cups gluten free flour blend, like pamala's
- 1 cup brown sugar, firmly packed
- 1 cup granulated sugar
- 2 teaspoons cinnamon or apple pie spice
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup butter, softened
- 3 - eggs
- 1/4 cup yogurt , plain, vannila or strawberry
- 1 cup chopped nuts, pecan or your choice
- 4 cups rhubarb cut in ½ inch pieces
- FOR GLAZE
- 1 cup powder sugar
- 1 teaspoon cinnamon
- 3 tablespoons water
How To Make gluten-free rhubarb coffee cake

Step 1Grease a 13"x9" cake pan preheat oven to 350

Step 2Mix dry ingredients in a bowl. set aside.

Step 3. In a separate bowl cream butter and sugar, add eggs and yogurt, beat on high for a few minutes.

Step 4Combine the liquid and dry ingredients, add rhubarb and nuts. This will be a thick batter, moisture will come from the rhubarb as the cake cooks

Step 5Cook for 1 hour or until a toothpick inserted into the center comes out clean.

Step 6To make the glaze mix powdered sugar, Cinnamon Spice Blend and water until smooth. When cakes starts to cool pour glaze over the top. ENJOY!
