gluten free micro coffee mug cake

When pre-packaged mirco cakes came out, I used to buy them and enjoy whenever I wanted a snack quickly. After becoming gluten free was unable to have these. Adapting a recipe I found from a few years back to make your own version using a coffee mug I am now enjoying a quick desert whenever I want one in minutes. If like me you are alone baking a cake is too much left over. This recipe serves 1.

Ingredients
- 4 tablespoons gluten free flour- your choice
- 1/4 teaspoon xantham or guar gum
- 4 tablespoons sugar
- 2 tablespoons cocoa powder
- 2 teaspoons cornstarch
- 1 - egg
- 3 tablespoons milk
- 3 tablespoons oil
How To Make gluten free micro coffee mug cake

Step 1Combine dry ingredients in a coffee mug.

Step 2Add, egg, milk and oil to dry. Mix till just moistened.

Step 3Place coffee mug in microwave. Microwave on high 3 minutes. Don't worry it will not overflow mug, once it is done cooking 3 minutes it will collapse back down a bit. remove and enjoy. Dress with fruit or ice cream or whipped cream

Step 4Tip: you can change the flavor of the cake by adding flavorings or extracts or omitting the chocolate but adding a different ingredient like coconut. As for the flour mix again your choice. If you want to use coconut flour, or another kind that is fine. The varieties are endless.
