Spice cake is one of our family favourites. Can make cupcakes, or a layer cake with cream cheese frosting for othr special times. Or make 9 x 13 as a snack cake.

Ingredients For gluten free grandmas spice cake

  • 3/4 c
    asian white rice flour
  • 3/4 c
    brown rice flour
  • 1/2 c
    cornstarch
  • 1/4 c
    tapioca starch
  • 1/2 tsp
    xanthan gum
  • 1/2 c
    dark brown sugar packed
  • 1/2 c
    granulated white sugar
  • 1/2 tsp
    salt
  • 2 tsp
    baking soda
  • 3 tsp
    cinnamon
  • 1 tsp
    ground ginger
  • 3/4 tsp
    ground nutmeg
  • 1/4 tsp
    ground cloves
  • 2 lg
    eggs
  • 1/2 c
    canola or vegetable oil
  • 1 1/2 c
    buttermilk

How To Make gluten free grandmas spice cake

    Preheat oven to 350 degrees.

    Grease and rice flour a 9 x 13 pan, or two 8 inch pans for a layer cake.

    Whisk all the dry ingredients together and blend well in your mixer bowl.

    Mix all the wet ingredients well, and add to the dry ingredients beating on medium speed for two minutes.

    Pour into prepared pans.

    Bake until tester comes away clean. 35 to 40 minutes for the layer pans or 40 to 45 minutes for the 9 x 13 pan.

    When the tester comes away clean, then remove and place on a wire cooling rack and leave for five minutes before turning out. Place on wire rack and completely cool.

    I like a coffee glaze on my cake. Some like a cream cheese frosting, and others like a thick caramel frosting. I make cupcakes with this batter too.
