3/4 casian white rice flour

3/4 cbrown rice flour

1/2 ccornstarch

1/4 ctapioca starch

1/2 tspxanthan gum

1/2 cdark brown sugar packed

1/2 cgranulated white sugar

1/2 tspsalt

2 tspbaking soda

3 tspcinnamon

1 tspground ginger

3/4 tspground nutmeg

1/4 tspground cloves
-
2 largeeggs
-
1/2 ccanola or vegetable oil

1 1/2 cbuttermilk
How to Make Gluten Free Grandmas Spice Cake
- Preheat oven to 350 degrees.
- Grease and rice flour a 9 x 13 pan, or two 8 inch pans for a layer cake.
- Whisk all the dry ingredients together and blend well in your mixer bowl.
- Mix all the wet ingredients well, and add to the dry ingredients beating on medium speed for two minutes.
- Pour into prepared pans.
- Bake until tester comes away clean.
35 to 40 minutes for the layer pans or 40 to 45 minutes for the 9 x 13 pan. - When the tester comes away clean, then remove and place on a wire cooling rack and leave for five minutes before turning out. Place on wire rack and completely cool.
- I like a coffee glaze on my cake.
Some like a cream cheese frosting, and others like a thick caramel frosting.
I make cupcakes with this batter too.
