Spice cake is one of our family favourites. Can make cupcakes, or a layer cake with cream cheese frosting for othr special times. Or make 9 x 13 as a snack cake.

Ingredients For gluten free grandmas spice cake

3/4 casian white rice flour

3/4 cbrown rice flour

1/2 ccornstarch

1/4 ctapioca starch

1/2 tspxanthan gum
-
1/2 cdark brown sugar packed

1/2 cgranulated white sugar

1/2 tspsalt
-
2 tspbaking soda
-
3 tspcinnamon
-
1 tspground ginger
-
3/4 tspground nutmeg
-
1/4 tspground cloves
-
2 lgeggs
-
1/2 ccanola or vegetable oil

1 1/2 cbuttermilk
How To Make gluten free grandmas spice cake

1Preheat oven to 350 degrees.

2Grease and rice flour a 9 x 13 pan, or two 8 inch pans for a layer cake.

3Whisk all the dry ingredients together and blend well in your mixer bowl.

4Mix all the wet ingredients well, and add to the dry ingredients beating on medium speed for two minutes.

5Pour into prepared pans.

6Bake until tester comes away clean. 35 to 40 minutes for the layer pans or 40 to 45 minutes for the 9 x 13 pan.

7When the tester comes away clean, then remove and place on a wire cooling rack and leave for five minutes before turning out. Place on wire rack and completely cool.

8I like a coffee glaze on my cake. Some like a cream cheese frosting, and others like a thick caramel frosting. I make cupcakes with this batter too.
