Spice cake is one of our family favourites. Can make cupcakes, or a layer cake with cream cheese frosting for othr special times. Or make 9 x 13 as a snack cake.

Ingredients
- 3/4 cup asian white rice flour
- 3/4 cup brown rice flour
- 1/2 cup cornstarch
- 1/4 cup tapioca starch
- 1/2 teaspoon xanthan gum
- 1/2 cup dark brown sugar packed
- 1/2 cup granulated white sugar
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 3 teaspoons cinnamon
- 1 teaspoon ground ginger
- 3/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 large eggs
- 1/2 cup canola or vegetable oil
- 1 1/2 cups buttermilk
How To Make gluten free grandmas spice cake

Step 1Preheat oven to 350 degrees.

Step 2Grease and rice flour a 9 x 13 pan, or two 8 inch pans for a layer cake.

Step 3Whisk all the dry ingredients together and blend well in your mixer bowl.

Step 4Mix all the wet ingredients well, and add to the dry ingredients beating on medium speed for two minutes.

Step 5Pour into prepared pans.

Step 6Bake until tester comes away clean. 35 to 40 minutes for the layer pans or 40 to 45 minutes for the 9 x 13 pan.

Step 7When the tester comes away clean, then remove and place on a wire cooling rack and leave for five minutes before turning out. Place on wire rack and completely cool.

Step 8I like a coffee glaze on my cake. Some like a cream cheese frosting, and others like a thick caramel frosting. I make cupcakes with this batter too.
