glenda hood's german apple cake

I babysat for the Hood's while in highschool. While this is called a cake, it's more of a coffee cake, can be eaten anytime of day....it's great warm or cold, with or without ice cream or whipped cream. It's a great fall cake. I will often make this to take into a family that has suffered a loss. You can cut the recipe in 1/2 to make an 8x8 pan. ALWAYS LABEL FOODS MADE WITH NUTS.

Ingredients
- 2 cups sugar
- 1/2 cup butter
- 2 - eggs
- 3 cups raw, peeled, chopped apples
- 1/2 teaspoon salt
- 2 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 3/4 cup chopped walnuts
- 1 teaspoon vanilla extract (1/2 tsp for 8x8 pan)
- TOPPING
- 1/4 cup brown sugar, lightly packed
- 1/4 cup sugar
- 1/2 cup chopped walnuts (i use more)
- 1 dash cinnamon

Step 1Preheat oven to 350*; Prepare 9x13 baking dish (spray with Pam or Oven Magic)

Step 2Cream sugar vanilla & butter. Add eggs and apples

Step 3In a separate bowl combine dry ingredients:flour, cinnamon, salt and soda. Add to vanilla, butter, egg and vanilla mixture. Put into prepared baking dish

Step 4In a separate small bowl combing topping ingredients of sugar, brown sugar, cinnamon and walnuts. Stir to combine and sprinkle evenly over the top of cake batter. Bake
