This is the recipe I found when I was searching on-line for a gingerbread muffin recipe. My mother and I love eating at a restaurant called Jason's Deli we always eat their gingerbread mini muffins (they are so good). I found this recipe on the Just A Pinch website and once I found this website, I immediately joined and have been using it ever since. If you love gingerbread you must try this recipe. Quick and easy and a good recipe for the upcoming holidays.

Ingredients

  • 1 cup dark brown sugar
  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup molasses
  • 1 cup buttermilk
  • 1 - egg
  • 1/2 cup butter (unsalted), melted

How To Make gingerbread mini muffins

  • Step 1
    Preheat oven to 350 degrees (F) and spray muffin pan with non-stick cooking spray.
  • Step 2
    Combine the dry ingredients (brown sugar, flour, baking soda, cinnamon, nutmeg, ground ginger and salt).
  • Step 3
    In separate bowl combine the remaining ingredients (molasses, buttermilk, egg and melted butter).
  • Step 4
    Fill your muffin pan about 3/4 full with the muffin batter.
  • Step 5
    Bake for approximately 15 minutes or until a toothpick comes out clean.
  • Step 6
    Remove from oven and cool muffins on a wire rack.
