g/f banana spice cake
A dense, moist snack cake. Serve with a dollop of whipped cream, if desired. I know the amount of vanilla sounds like a lot, but it really ups the flavor of the cake. Adjust spices to your own tastes, or change them up with your favorites. Be sure to use alond flour, not meal, as the flour is finer grind.

Ingredients
- 3 cups almond flour (not almond meal)
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder (g/f)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/4 cup honey (or agave nectar)
- 1/4 cup vegetable oil
- 2 - eggs
- 1 tablespoon vanilla extract
- 3 - ripe bananas, mashed

Step 1Preheat oven to 350F. Lightly coat a 9-inch cake pan with nonstick cooking spray.

Step 2In a large bowl, mix dry ingredients until well blended.

Step 3In another bowl, mix wet ingredients until blended and stir into the dry ingredients, mixing until blended.

Step 4Pour batter into prepared pan and bake 35-40 minutes.

Step 5Cool completely in pan on wire rack.
