I have made this cake since I was a teenager (in the 70's. I use to fix this for the soldier's at the Army base where we lived. Some of them liked it so well, that they would take up a collection of funds to buy the ingredients or just buy the ingredients for me to cook for their friends and family. :) note: We like the cake because you can slice it and eat it on the go or serve it as a breakfast bread.Enjoy!

Ingredients

  • 2 cups all purpose flour
  • 1 cup white sugar
  • 1/2 cup brown sugar (you can use light or dark)
  • 1 teaspoon baking soda
  • 2 - eggs
  • 1 can fruit cocktail (15 oz)you can leave whole or mashed the fruut
  • 1/4 cup chopped pecans
  • 1/2 teaspoon salt

How To Make fruit cocktail cake

  • Step 1
    Heat your oven to 350 degrees.
  • Step 2
    Spray a bundt pan or a large 9x12 cake pan with Pam spray.
  • Step 3
    Put all ingredients except fruit cocktail,(unless you mash the fruit) into one large bowl and mix until well blended.
  • Step 4
    Pour mixture into baking dish and bake in the oven for 35-40 minutes,or until golden brown.
