This is my daughter's recipe. It is perfect for Autumn. Hope you enjoy this apple cake. Try it with a hot cup of fresh coffee or tea.

Ingredients

  • 1 1/2 cups vegetable oil
  • 2 cups granulated sugar
  • 3 large eggs
  • 3 cups flour, all-purpose, sifted
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups apples, tart and chopped
  • 1 cup pecans, chopped
  • 2 teaspoons vanilla, pure extract
  • FROSTING
  • 1/2 cup butter
  • 1 cup brown sugar, firmly packed
  • 1/4 cup evaporated milk
  • 1 teaspoon vanilla flavoring

How To Make fresh apple cake

  • Step 1
    Beat the oil and sugar together until well blended. Add eggs one at a time, beating well after each. Sift together flour, salt and soda, add gradually to egg mixture, blending thoroughly. Stir in apples, pecans and vanilla. Pour in greased and floured 10-inch tube pan. Bake in 350 degree oven for 60-70 minutes.
  • Step 2
    Directions for Frosting: In a saucepan over medium heat, melt butter with brown sugar; add milk and bring to a rolling boil. Boil for 2 or 3 minutes, cool and add vanilla. If frosting is not thick, beat a few strokes. Frost top and sides of cake.
