This is my daughter's recipe. It is perfect for Autumn. Hope you enjoy this apple cake. Try it with a hot cup of fresh coffee or tea.

Ingredients

vegetable oil
2 c
granulated sugar
3 large
eggs
3 c
flour, all-purpose, sifted
1 tsp
salt
1 tsp
baking soda
3 c
apples, tart and chopped
1 c
pecans, chopped
2 tsp
vanilla, pure extract

FROSTING

1/2 c
butter
1 c
brown sugar, firmly packed
1/4 c
evaporated milk
1 tsp
vanilla flavoring

How to Make Fresh Apple Cake

Step-by-Step

  • 1Beat the oil and sugar together until well blended. Add eggs one at a time, beating well after each. Sift together flour, salt and soda, add gradually to egg mixture, blending thoroughly. Stir in apples, pecans and vanilla. Pour in greased and floured 10-inch tube pan. Bake in 350 degree oven for 60-70 minutes.
  • 2Directions for Frosting: In a saucepan over medium heat, melt butter with brown sugar; add milk and bring to a rolling boil. Boil for 2 or 3 minutes, cool and add vanilla. If frosting is not thick, beat a few strokes. Frost top and sides of cake.
