This is my daughter's recipe. It is perfect for Autumn. Hope you enjoy this apple cake. Try it with a hot cup of fresh coffee or tea.

  • 1 1/2 c
    vegetable oil
  • 2 c
    granulated sugar
  • 3 large
  • 3 c
    flour, all-purpose, sifted
  • 1 tsp
  • 1 tsp
    baking soda
  • 3 c
    apples, tart and chopped
  • 1 c
    pecans, chopped
  • 2 tsp
    vanilla, pure extract

  • 1/2 c
  • 1 c
    brown sugar, firmly packed
  • 1/4 c
    evaporated milk
  • 1 tsp
    vanilla flavoring

How to Make Fresh Apple Cake


  1. Beat the oil and sugar together until well blended. Add eggs one at a time, beating well after each. Sift together flour, salt and soda, add gradually to egg mixture, blending thoroughly. Stir in apples, pecans and vanilla. Pour in greased and floured 10-inch tube pan. Bake in 350 degree oven for 60-70 minutes.
  2. Directions for Frosting: In a saucepan over medium heat, melt butter with brown sugar; add milk and bring to a rolling boil. Boil for 2 or 3 minutes, cool and add vanilla. If frosting is not thick, beat a few strokes. Frost top and sides of cake.
