I came up with this recipe by changing a fresh apple cake recipe that I had into bars. Autumn is in the air and this is the perfect recipe to bring it in. The bars are so moist and the combination of Fiji and Granny Smith apples make it so delicious. This is my new favorite recipe for fall celebrations. I hope you enjoy it.

  • 2 cups granny smith apples, peeled and diced small
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 1/2 cups all purpose flour

  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla
  • 1 cup black walnut pieces
  • 2 - eggs, well beaten
  • 1 teaspoon baking soda

In a large bowl mix the oil and sugar with an electric mixer.
  • Step 2
    Add the eggs and mix.

Gently fold on the apples, vanilla and walnuts by hand.
