fluffy apple cake

I learned to make this cake from an old German woman named Ilsa who owned the restaurant I was working in while living in Ireland. She told me the recipe once off the top of her head, I scribbled it down and it has since become one of my most popular dishes (my dad requests one every year at Christmas)! I make at least 6 at Christmas as gifts and also for other special occasions and holidays. A very moist, light and fluffy apple cake with a lemony zing! (Sorry about the slice missing, I tore into it forgetting I needed a picture!)

Ingredients

  • 1 - lemon
  • 3 - granny smith apples
  • 3 - eggs
  • 1 teaspoon vanilla extract (optional-almond essence)
  • 1/2 cup butter or margarine
  • 1/2 cup white sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • - cinnamon
  • - dark or golden raisins
  • - almond flakes, almond slivers or chopped walnuts
  • 1 - 8 inch round cake tin

How To Make fluffy apple cake

  • Step 1
    Pre-heat oven to 350f.
  • Step 2
    Grate complete rind of lemon, set aside.
  • Step 3
    Squeeze juice from lemon, set aside.
  • Step 4
    Peel and core apples. Slice them into 1/2 inch thick wedges. (Place slices into lemon juice, to save their color, if preferred)
  • Step 5
    Separate the egg whites from yolks.
  • Step 6
    Cream vanilla, butter and sugar.
  • Step 7
    Add egg yolks to butter and sugar, mix well.
  • Step 8
    Add flour and baking powder, mix well.
  • Step 9
    Add lemon juice and grated rind, mix well.
  • Step 10
    In separate bowl, beat egg whites until VERY stiff.
  • Step 11
    Fold egg whites GENTLY and lovingly into batter with a wooden spoon.
  • Step 12
    Pour into greased 8" cake tin.
  • Step 13
    Place apple slices on top of batter in slightly overlapping, concentric rings from the outside in. (You might have slices left over. Eat them and enjoy!)
  • Step 14
    Sprinkle raisins, cinnamon and almond (or walnut) pieces on top (in amounts that suit your taste).
  • Step 15
    Bake for 30 minutes. I find the exact amount of time seems to change with each cake, so do the butter knife test at 30 minutes, cook a bit longer if knife blade doesn't come out clean from the center.
  • Step 16
    As soon as knife blade comes out clean from the center of the cake, it's done!
  • Step 17
    As soon as cake cools, sift powdered sugar on top if desired for an extra touch of sweetness!
