Ingredients

  • CRUST:
  • 2 c
    ground graham crackers
  • 1 tsp
    ground cinnamon
  • 1/3 c
    ground walnuts
  • 1 tsp
    maple extract
  • 1 stick
    butter, melted
  • FILLING:
  • 1 lb
    cream cheese
  • 3
    eggs
  • 3/4 c
    stevia in the raw
  • 1 pt
    sour cream
  • 1/2
    lemon, zested
  • 1/2
    orange,zested(optional)
  • 1 dash
    pure vanilla extract
  • 1 dash
    orange liquer( optional)

How To Make

    Preheat oven @325*F
  • 2
    For the crust: In a mixing bowl,combine all ingredients until moistened.Coat the bottom and sides of an 8 -inch spring-form with non stick cooking spay.

    Pour and press crumbs down into the base and 1'up the sides. Refrigerate for 5 min.

    For the Filling: With electric mixer mix in a bowl cream cheese on low speed for 1 min.Add eggs one at the time until combined.Gradually add Stevia ,sour cream,lemon& orange zest ,vanilla,orange liqueur.Periodically scrape down the sides of the bowl.don't over beat. Pour the filling into the crust-lined pan and smooth top with a spatula.

    Set the cheesecake pan on a large piece of aluminum foil and fold up the sides around it Place the cake pan in a large roasting pan.Pour boiling water into the roasting pan until the water is half full up the sides of the cheesecake pan .Bake for 50 minutes.Let it cool in pan for 30 min.chill in the refrigerator,loosely covered for at least 4 hours.Unmold and transfer to a cake plate. Garnish to your liking.
