Cindy, a member of my bowling league brought this cake for someone's birthday - it was so tasty I just had to share it. I never use cake mixes, so this is my idea of easy.

Ingredients
- DRY INGREDIENTS
- 2 cups all purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- WET INGREDIENTS
- 1 can crushed pineapple, 20 oz. including the juice
- 2 large eggs
- 2 teaspoons pure vanilla extract
- FROSTING
- 1 package cream cheese, 8 oz.
- 1/2 cup butter
- 1 teaspoon pure vanilla extract
- 2 cups powdered sugar
How To Make easy pineapple cake with cream cheese frosting

Step 1Mix the dry ingredients in a large bowl. Make a well in the center.

Step 2Add the wet ingredients and beat until well mixed.

Step 3Lightly spray a 9 x 13 baking dish with baking spray. Pour batter in the baking dish and bake at 350 degrees for about 30 minutes until golden. Cool.

Step 4Make the frosting by first creaming together the butter, cream cheese and vanilla. Beat in the powdered sugar until creamy.

Step 5OPTIONAL: Decrease the sugar by 1/2 cup and add 3/4 cup sweetened coconut to the batter.
