Ingredients
- THE CAKE
- 1 box pillsbury white cake mix
- 3 - whole eggs
- 1/2 cup unsweetened coconut milk
- 1/2 cup water
- 1 stick unsalted butter, softened
- 1 tablespoon coconut extract
- 1 1/2 cups sweetened coconut flakes, chopped
- 1 tablespoon unsalted butter, softened
- THE FROSTING
- - 1, 8oz package cream cheese, softened
- 1 stick unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1/2 teaspoon pure vanilla extract
- 2 teaspoons coconut extract
- 1 cup sweetened coconut flakes

Step 1IN A SMALL BOWL MIX CREAM CHEESE, UNSALTED BUTTER, POWDERED SUGAR, VANILLA EXTRACT COCONUT EXTRACT AND COCONUT FLAKES UNTIL BLENDED. WITH A CAKE BEATER, BEAT AT HIGH SPEED UNTIL SILKY SMOOTH AND CREAMY. COVER WITH A LID AND REFRIGERATE.

Step 2PREHEAT OVEN TO 325. IN A LARGE BOWL ADD CAKE MIX, EGGS, COCONUT MILK, WATER, 1 STICK OF BUTTER, COCONUT EXTRACT & COCONUT FLAKES. MIX WITH A LARGE SPOON UNTIL BLENDED. WITH A CAKE BEATER, BEAT AT HIGH SPEED FOR 2 ½ - 4 MINUTES. BATTER WILL BE THICK.

Step 3WITH THE 1 TBSP. OF BUTTER, BUTTER 2 8” ROUND OR 1 13X9” GLASS CAKE PAN. SPOON IN THE BATTER AND SPREAD EVENLY. BAKE FOR 15 – 20 MINUTES OR UNTIL GOLDEN BROWN AND KNIFE ENTERED IN THE CENTER COMES OUT CLEAN. IN THE MEANTIME, REMOVE THE FROSTING FROM THE REFRIGERATOR TO SOFTEN. COOL THE CAKE COMPLETELY THEN FROST IT.
