double chocolate red beet cake

Before my mom died in December 2011, she finally gave me some of her best recipes. She loved chocolate and she loved beets, so she used them both to make this cake. Its very moist and very good!! I don't even like beets, But this is good.Lol a good way to make me eat my beets, which are good for you anyway. For you MOM. Ive made this for my Husband he like its alot.

Ingredients
- 2 large beets
- 3/4 cup unsalted butter, softened
- 1 2/3 cups organic sugar cane sugar
- 2 teaspoons pure organic vanilla extract
- 3 large organic brown eggs
- 1 cup sour cream
- 2/3 cup organic cocoa powder
- 2 cups organic flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- CHOCOLATE CREAM CHEESE FROSTING
- 4 ounces package cream cheese, softened
- 1/2 cup unsalted butter
- 1/2 cup organic cocoa powder
- 4 to 6 cups confectioner's sugar
- 2 teaspoons pure organic vanilla extract
How To Make double chocolate red beet cake

Step 1Line a baking sheet with parchment paper. Generously spray two 9-inch cakek kpans with non-stick cooking spray anmd then line wiwth circles of parchment paper. Place on the baking sheet. Preheat the oven to 375F.

Step 2cut up beets into quarters and place in a small oven-proof pan with about 1/2 cup water. Roast until tender, about 45 minutes. Cool, peel and puree to make 2/3 cup. Set aside. Lower oven timperature to 350F.

Step 3In a mixer bowl, cream the butter and sugar until well blended. Add eggs and vanila, and mix well. Add sousr cream and mix well. add beet puree. Stir together cocoa, flour baking soda, baking powder, and salat, then fold into wet mixture.

Step 4Spoon batter into prepared cake pans and bake until done, so cakes spring back when lightly touched, 35 to 40 minutes. Cool cakes well and then turn out onto cake raacks to completely cool.

Step 5to make the Chocolate Cream Cheese Frosting, blend cream cheese, buter, coca, confectioners; susgar and vanilla together in a mixer or food processor. Add a touch of milk if necessary to achieve a smooth frosting consistency. Frost cake layers and chill cake for 30 minutes. Enjoy:)
