HERE IS MY SPIN ON PUMPKIN MUFFINS, I LIKE THE CAKE LOOK A LITTLE BETTER IT REMINDS ME OF SPICE CAKE. I ALSO PUT A BROWN SUGAR SPRINKLE ON TOP OF THE CAKE TO GIVE IT A CRISP TASTE AND LOOK.
Ingredients

1/2 cplus 2 tbsp dark brown sugar

2 call purpose flour

2 tspbaking powder

1 tsppumpkin pie spices

1/2 tspsalt

2 largeegg whites

1 c100% pure pumpkin

1/2 cfat-free milk

2 tspcanola oil
How to Make DIABETIC DARK BROWN SUGAR PUMPKIN CAKE
- In a small bowl, combine all the dry ingredients. In another bowl combine all the wet ingredients. Stir in the dry ingredients un til mositened.
- Coat pan with cooking spray. Bake at 400 F for 20-25 minutes or unilt insert come out clean. cool for 10 minutes before moving from the pan. Serve warm. with honey butter.
