HERE IS MY SPIN ON PUMPKIN MUFFINS, I LIKE THE CAKE LOOK A LITTLE BETTER IT REMINDS ME OF SPICE CAKE. I ALSO PUT A BROWN SUGAR SPRINKLE ON TOP OF THE CAKE TO GIVE IT A CRISP TASTE AND LOOK.

Ingredients For diabetic dark brown sugar pumpkin cake

  • 1/2 c
    plus 2 tbsp dark brown sugar
  • 2 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1 tsp
    pumpkin pie spices
  • 1/2 tsp
    salt
  • 2 lg
    egg whites
  • 1 c
    100% pure pumpkin
  • 1/2 c
    fat-free milk
  • 2 tsp
    canola oil

How To Make diabetic dark brown sugar pumpkin cake

    In a small bowl, combine all the dry ingredients. In another bowl combine all the wet ingredients. Stir in the dry ingredients un til mositened.

    Coat pan with cooking spray. Bake at 400 F for 20-25 minutes or unilt insert come out clean. cool for 10 minutes before moving from the pan. Serve warm. with honey butter.
