HERE IS MY SPIN ON PUMPKIN MUFFINS, I LIKE THE CAKE LOOK A LITTLE BETTER IT REMINDS ME OF SPICE CAKE. I ALSO PUT A BROWN SUGAR SPRINKLE ON TOP OF THE CAKE TO GIVE IT A CRISP TASTE AND LOOK.

Ingredients
- 1/2 cup plus 2 tbsp dark brown sugar
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon pumpkin pie spices
- 1/2 teaspoon salt
- 2 large egg whites
- 1 cup 100% pure pumpkin
- 1/2 cup fat-free milk
- 2 teaspoons canola oil
How To Make diabetic dark brown sugar pumpkin cake

Step 1In a small bowl, combine all the dry ingredients. In another bowl combine all the wet ingredients. Stir in the dry ingredients un til mositened.

Step 2Coat pan with cooking spray. Bake at 400 F for 20-25 minutes or unilt insert come out clean. cool for 10 minutes before moving from the pan. Serve warm. with honey butter.
