This cake is made with reg.flour instead of the whole wheat flour I use in the other one along with a few different items in it. But still the same sweet taste without the sugar.

Ingredients

  • 2 c
    flour
  • 2 tsp
    cinnamon, ground
  • 2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 tsp
    baking powder
  • CARROT MIXTURE

  • 2 c
    carrots, grated
  • 1 c
    pineapple, crushed and drained
  • 1/2 c
    nuts crushed
  • 1/2 c
    sesame seeds
  • 1 1/2 c
    coconut, unsweetened flaked
  • EGG MIXTURE

  • 3
    eggs
  • 1/2 c
    oil
  • 1/2 can(s)
    frozen juice concentrate i use apple or orange.

How to Make Diabetic Carrot with reg. flour

Step-by-Step

  1. Add the carrot mixture to the egg mixture,then add the flour mixture.Bake at 350* for 1(to 1 1/4 hr.in a bundt pan.Let cool 10 mins.then turn out and finish cooling.
  2. It may sound or look like a lot of sesame seeds but they blend in well you will be surpise.
