This is a recipe my aunt shared with me. She told me the reason it was called depression cake is because it has no butter or eggs which were expensive during the depression.

Ingredients

  • 1 1/2 cups sugar
  • 2 cups raisins
  • 1 cup shortning (i use crisco)
  • 1 teaspoon ginger
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups hot water
  • 3 cups flour
  • 1 teaspoon baking soda

How To Make depression cake

  • Step 1
    Preheat oven to 350. Spray a 9x13 pan with oil. I prefer a glass baking dish.
  • Step 2
    Combine all but flour and baking soda in a medium sauce pan. Bring ingredients to simmer and let cook for 5 minutes.
  • Step 3
    Let stand for 3 minutes then add the flour and baking soda stirring only until all is combined.
  • Step 4
    Pour in to a 9x13 prepared pan. Bake at 350 degrees for 20-25 minutes.
  • Step 5
    This cake is very good by itself as a spice cake but I prefer cream cheese frosting on top of it.
