How to Make Create Your Own Coffee Cake

Step-by-Step

  1. Cream together butter and sugar. Can be done by hand or with an electric mixer. Add eggs and incorporate into butter mixture. Add dry ingredients and incorporate. Gradually add sour cream and vanilla. Do not over beat.
  2. If using chocolate chips add to batter now. Otherwise, put half of batter into a buttered and floured tube pan. If using fruit arrange fresh or drained fruit on the batter. Use as much or as little as you like. Sprinkle with one half the topping. Add remaining batter, smooth to edges of pan. Sprinkle with remaining topping. Bake for 45 minutes at 350 degrees or until done.
  3. Remove from oven and cool 10 minutes in pan on rack. Use a plate to invert cake and remove from outer pan. Carefully remove bottom and inner tube insert. Invert again so that the topping is on top. Cool until cool enough to eat, great with whipped cream or vanilla ice cream!
