creamy lemon cupcakes

I love how using fresh lemons in this really brings out the flavor! I always make a lot, they go quickly in my house!!

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 3 - eggs
  • 2 teaspoons lemon zest, grated
  • 1 teaspoon vanilla extract
  • 2 cups sour cream
  • 3 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

How To Make creamy lemon cupcakes

  • Step 1
    sift flour and dry ingredients, set aside.
  • Step 2
    cream butter and sugar.
  • Step 3
    add eggs, lemon zest and vanilla.
  • Step 4
    alternate adding dry ingredients and sour cream. batter will be thick.
  • Step 5
    add 1/4 cup of batter into cupcake pan. (i use cupcake papers)
  • Step 6
    bake at 350 degrees, for 25 - 30 minutes. let cool 10 minutes in pan, then rack cool.
