2 cflour or gluten flour
3 Tbspbaking powder
1/3 cmargarine or light margarine
1/4 cnon-fat milk or milk
1/2 tspalmond extract
1/2 tspvanilla extract
1 csugar or spenda sugar (24 packets)
How to Make Coffee Cake for Diabetic
- Sift together the flour and baking powder. Fold in the margarine and set aside.
In a separate bowl, place the egg,milk,cold coffee,almond extract,vanilla extract and sugar or Splenda sugar and mix well. Add in the flour mixture and beat until the batter is smooth.
- Pour the batter into a greased 13x9 inch pan.
Bake for 30 minutes at 325F.
- To check if the cake is done,insert a toothpick or knitting needle through the center. If the toothpick or needle come out clean, you'll know your cake is ready.
